Aztec Hotel and Spa have been celebrating
Junior Chef de Partie, Eliza Brewer, being named
Young Chef of the Year at the
Bristol Hoteliers Association Night of the Stars Awards.
Eliza started in the restaurant at
Aztec Hotel and Spa in 2014 and has worked her way up to her current role.
As a finalist in the awards Eliza had to take part in a cook off in November where she had to prepare and serve two dishes in ninety minutes to showcase her abilities.
Eliza selected two challenging dishes, preparing a gin-cured salmon starter with chervil mayonnaise, burnt grapefruit, confit lemon and pink grapefruit gel. This was followed by a braised ox cheek main with hispi cabbage, crushed celeriac, celeriac puree and red wine jus.

Eliza is a hard-working, dedicated and talented member of our team. She is passionate, driven and a great team player and is the driving force in the kitchen, although a passion for pastry she has the ability to fit in any section of the kitchen when needed with ease. She is a great team player with a strong work ethic and excellent ability. I knew in the first few days of starting at the Aztec Hotel and Spa that she would join this journey with me, I have encouraged Eliza to push her own abilities to the limit and beyond, which has enabled her to grow her skills, such as making bread, ice creams, petit fours and desserts daily which was new to the kitchen team at the Aztec.”
Speaking of her win Eliza said, “
It was a fantastic surprise to be named Young Chef of the Year and a great reward for all the hard work. I have been so lucky to have the support of the team in the kitchen who have helped me develop new skills through amazing courses and training. I am looking forward to continuing to grow as a chef and I hope this is just the first of many awards.”
