Iain Miller, Head Chef at Woodside, a Sundial Group venue, has won the 2013 UK Copper Skillet Competition run by the International Association of Conference Centres (IACC).
On 9 February, Miller battled it out in a ‘Cook Off' with 8 other chefs to become the IACC's UK National Champion.
His winning dish was a pave of Balmoral Venison, creamed savoy cabbage, Clonokilty black pudding hash with a sage & pancetta jus.
The Copper Skillet Competition is designed to highlight the artistry and skills of IACC-member conference centre chefs from around the world and to honour their contributions to a shared goal of providing an outstanding conference experience.
Miller won not only the UK title, but also a complimentary round-trip to the IACC's annual conference in Chicago and he goes on to represent the UK in the IACC's prestigious Global Chef of the Year Championship on 20 March 2013.
